Tamarian's Inverted Shepherd's Pie
 
I made this for our last Vancouver potluck and got great compliments on it.

Ingredients:

1 large head of cauliflower, grated
1 small red onion, diced
5 cloves of garlic, crushed
1 red bell pepper, diced
1 lb lean ground beef
1/2 cup malt vinegar
1/2 cup cottage cheese
6 thin slices of mozzarella
1 jalapeño, thinly sliced
2 Tbsp tomato paste
Curry to taste
Sea slat to taste
Cilantro and herbs to taste
Cayan pepper to taste

Cook the grated cauliflower with cottage cheese and salt on low heat for 1/2 hour until mashed and soft, blend well. Place at the bottom of a loaf pan. You can use a hand mixer to soften it.

Sauté onions and garlic with the red pepper and jalapeño, add beef, paste, salt, curry and vinegar. Cook for 15 minutes until thick and juicy. Drain excess liquid, if any.

Add on top of the cauliflower in the loaf pan. Top with slices of mozzarella.

Place in pre-heated oven at 350 F for 20-25 minutes until top is golden brown.

Enjoy.

Wow! Thanks Wa'il .. another winner from the Shepherd. Would go great with a slice of Shepherd's Loaf bread.

I think the mashed cauliflower on the bottom is a great idea ... unlike traditional where the mashed potato is on top. The flavours and juices from the meat can soak down into it. Yum :yum:

Men, lock up your women if you make this dish!

I decided to take advantage of a cool day and made a triple batch of Wa'il's Shepherd's Pie. Mary came home and started raving about how good the place smelled. She hovered around the stove until I chased her out of the kitchen. When I loaded the plate with her usual quantity she gave me a scornful look and added a few more scoops, and then inhaled the lot.

Once dinner was done, she called her mom across the continent to tell her about the great meal, never once complaining about the usual mess in the kitchen.

I thought my ego had had enough bashing ( I had to admit that the dish was not my creation) and was thinking twice about reporting the incident here. However after the events of this morning I thought I had better send a warning out. I got a call from Mary requesting an urgent email. She had been bragging about the meal at work, and now everyone there wanted the recipe. I have just sent it off ( with strict warnings about properly attributing it to Wa'il) and decided to post this warning.

Do not eat this dish! It will have you proclaiming its wonders to all your friends and relatives. And Ladies, if you are unfortunate enough to meet Wa'il, do not look him in the eyes....he will steal your soul!

I am sheathing my knife and going off to sulk.

what is the carb count, and how do you grate cauliflower?

This wouldn't by any chance be ok for induction would it ;)

I just input the recipe into fitday. The carbs were quite high for the entire recipe.........If you get eight servings out of it, the carbs for one serving are 9.75...........and I don't think I could only eat one eighth. here are the stats for the entire recipe.

It is delicious, but it's not as high in carbs as you may think...

78 grams carbohydrate - 25 grams of fiber = 53 grams of effective carbohydrate.

Divided by 8 servings it equals 6.6 grams of effective carbohydrate.

Enjoy a piece with a Greek salad! :D

Just wanted to revive this thread, and let everyone know how FABULOUS this recipe is :yum: Hadn't had for a while, but made a batch on the weekend .. froze the leftovers in portions. It reheats well :thup:

Changes I made ... I knew I'd be freezing it, so I added a lightly beaten egg to the cauliflower mixture right before spreading it in the baking dish, to help it stay "solid". It reheats well (thaw it first) in the microwave and also in the oven (350°F). Also, I steamed the cauliflower separately till very soft, then mashed with the cottage cheese (and egg). I also increased the tomato paste to 6 Tbsp :yum:

Definitely a winner!! :thup:

What spices/herbs did you use? I have this in the oven right now, but not sure how it will turn out. The cauliflower was not as mashed as it should have been, and I did not have malt vinegar. I splashed some apple cider vinegar on top.

Guess I will see what happens

I dumped in a big scoop of madras curry powder, ground cumin, some oregano and dried red chili flakes (I didn't have any jalapenos). I didn't use malt vinegar either, I used ¼ c. each red wine vinegar and cider vinegar. Not sure how it will turn out with the vinegar put on top of the assembled dish? .. I think cooking it in with the meat and spices allows it to mellow and the flavours can "mingle".

Regardless, the leftovers will be delish! :thup:

I do not have malt vinegar, can u use white wine vinegar instead?
