LOL yes sorry I was holding my 1 year old and my 2 year old was also trying to climb in my lap while I was typing ...

I live in central LA ! I really can form complete sentences ... just not always while my kids are fussing!

I'm from Louisiana too. Hammond, LA. It's nice to meet ya'll. I tell ya, it's hard to eat right down here with all the good food we are used to eating. But I know we can do it (and maybe be able to have a taste of our cuisine from time to time :D )

Aloha Y'all,

My grandparents were born in South LA. and my father grew up on the Gulf Coast. I helped to plan a few family genealogy meetings in Erath and Rayne about 13 years back.

I share your "pain" in the challenge of enjoying Cajun foods while staying true to the LC WOE. It can be done! I'm working on adapting recipes popular here in Hawaii to LC, but occassionally I dream of doing the same with Cajun cuisines.

In order to enjoy crawfish, I had to order a case of frozen tail meat late last year. One fella here has a farm a few hours away, but the resort demand renders his prices just too steep for me :-(

Hope to hear from more of you folks in Louisiana!

Gotta tell ya, the crawfish were awesome this year!! And the shrimp are wonderful now, too. The LCing isn't bad at all with the cajun cuisine *this time*. I find that I'm not craving the sauces, gravies, breading on fried foods, heck, not even craving red beans & rice! We have been baking alot of catfish, and having shrimp and crab meat sauteed in butter on top of steaks. Our next 'big thing' is gonna be 'pecan crusted baked catfish' :yum: DH and I go fresh water fishing alot and have taken up baking da bass 'n bream instead of frying in 'fish fry'...pretty darn good.

Mais, I can't believe, some Louisiana people, but ya'll not in Cajun Country, what's a matter with ya'll? Ya'll ain't learned about the best place to live....

Just dropping in to say hi. ..... I guess we know that living in Louisiana is a handicap for low carbing...:)

U are right, you are smack dab in the middle of it. We get to go to Breaux Bridge often, my husband rides his dirtbike at the track there a couple of times a month.....

Cool... About that dirt bike track, I am happy they put up the privacy fence before someone on the higway had an accident from watching the events while driving by... Me, I came close to an accident a bunch of times before that fence went up...:):)

I have been meaning to go to one of those events. I think they have bleachers set up for viewing now.... right?

Yea... they have bleachers up now... and they are covered. And at night, it's lit now. It's pretty nice, ecspecially when the weather cools off a bit, as long as you don't mind a little bit of dirt/dust.

aloha Cajunboy! long time no chat!

I love Cajun Country but oooh the humidity (as with the rest of the South). I've been to Breaux Bridge back in the '90s when I helped start the genealogy family reunions that led to the creation of my family's genealogy society. I traveled to Lafayette (oh love that Deano's Pizza), New Iberia (the best of the Landry's restaurants), Erath, Rayne, Baton Rouge, Pierre Part, Morgan City, and Opelousas. I'm back on the mainland, its Florida, but at least I'm on the water!!!!! (and near my parents).

I mentally miss the rice as a base for Red Beans and rice, but it hasn't kept me from adapting recipes for Cajun eating.

Hope ya'll are having a great New Year's Day, you all in secure housing and beating off this bad economy. Here's to new and improved LC recipes/products for 2009.

I just moved to lake charles and have two hurricanes under my belt! What an experience that was. Now, if only I could loose weight down here. Seems I put on 5 lbs as soon as my foot entered this state!
