Lime Yogurt Goodie
 

I love key lime pie, key lime yogurt, and greek yogurt. Where I live (Interior Alaska) my choices are quite limited on low carb yogurt.
So, I made this quick little goodie:

1 small package sugar-free lime jello
1 cup boiling water
3/4 cup cold water
1 7oz container Fage greek yogurt (2% is all that I can find)
2 oz crushed almonds

In a medium bowl, mix the boiling water with the jello package. Add the carton of yogurt. Blend till smooth. Blend in the cold water. In cupcake wrappers put a teaspoonful of the almonds in the bottom. Pour in the jello/yogurt mix. Some of the nuts might mix upwards. Thats ok...adds crunch. Refrigerate. Makes 8.
