I know this is an old thread ... but I came up with a yummy cookie recipe. It was so good that even my non Paleo friends LOVED them. They are great with my morning cup of tea. Hubby didn't like that they don't dip in his milk like regular cookies ... though as we Paleos wouldn't normally drink a big glass of milk, I don't see this as a problem.
Almond, Hazelnut choc chip cookies 2 cups of almond flour 1 cup almond butter (Costco) 2 eggs 1 cup hazelnut flour (grind your own) 3 tbsp coconut oil 1/3 cup honey cinnamon 2 chunks of dark cooking chocolate roughly chopped coconut milk (add to correct consistency - roughly 1/3 cup) Preheat oven to 180c or 350f Blend hazelnuts in coffee grinder or blender. Mix all ingredients adding coconut milk last to consistency like cookie batter rather than dry muesli bars. Spoon mixture onto baking tray and bake for 15 mins or until brown on the outside. Are still edible if slightly burnt looking on the outside. I am still experimenting with temps and cooking times, wondering if I can lower the baking temp ... wasn't a serious baker before converting to the Paleo plan, so not sure if that would work. Made a lot of cookies. |
That looks yummy! If you have to cook them until they burn on the outside to make them dry enough on the inside, then you probably need to reduce the liquids a bit.

I don't do much Paleo baking, as most recipes still have some type of sweetener, but Abel James raved about this Paleo Banana Bread and this has none, so I tried it. 4 bananas makes it sweet and carby (I calculated 17g carbs for 1/10 loaf) but it is indeed good.

I've made these pumpkin pie muffins several times and they're really nice. The texture is sort of half way between pie filling and a bready muffin. :thup:

This is a fantastic bread recipe I use weekly. You can adjust the flavours via the herbs, I often do onion powder instead of herbs.
