Do you need to refrigerate olives once the jar has been opened?

Yes, the jars or cans say refrigerate after opening.

Olives are cured and are usually safe if you do not refridgerate them. It all depends on how and what they are cured in. Also, if they are pitted, you want to keep a close eye on them. Sometimes, if exposed to air and not refridgerated, they can grow mold.

I usually put mine in the fridge even before opening. I tend to like them cold. There is something refreshing about the cold and saltiness mixed together.

I am here in Jordan (arab land) ;) and they are always eating olives,,, Most of the time i have not seen them in the fridge, they just pour some in small dish and put some olive oil on them. The green ones mostly. I do that too, as long as they are covered, they wont mold.
