After cooking your roast, either poultry or meat, save the pan juices. Add herbs of your choice. Maybe add any of the following, garlic, onion, mustard, a little tomato paste, seasonings, wine, lemon juice. Simmer gently until well cooked. Soy sauce will act as a browning agent if you like. Finally, add a little cream and cook until slightly thickened. Have fun experimenting with this.
