I tried to make dumpling with the Atkins bake mix, but the disappeared as soon as they hit the broth.. Anyone have any good recipes for chicken and dumplings?

Hi! I know this is an old thread, but I discovered something that's remarkably like dumplings - fried tofu balls. They're available from my local Asian grocery store. It's actually not quite tofu, but some kind of dough made from soy flour and fried. They're very bread-like! Unfortunately, the carb count isn't on them, but soy flour and oil were the only ingredients.

Kristine, your tofu balls reminded me of something else - fried gluten balls. They're available in oriental grocery stores. Pour plenty of boiling water over them to refresh them and squeeze dry. The same goes for fried tofu.
