MY husband finally came home from the states. And safely at that... He brought back with him the Akins Bake mix that I am excited about.. I will let you know how my recipeis turn out... My first thing I want to do is make a cheese cake using that as a crust. I saw a recipe somewhere but got to go find where I saw it...
Have any of you tried it? what is yall's favorite recipe?

Hi Debbie,

I just bought the bake mix myself this past weekend and haven't had a chance to try it out yet.

It does say you can use it in your own recipes, your just replacing it instead of using the regualar flour.

I bought the Atkins Bake Mix l4 months ago and I still have some left. I found that it tasted just awful. The bread recipe that is on the side of the can doesn't in any way taste like bread. There are many good recipes on this website using almond flour that taste much better. I hope you ladies have better luck with the bake mix than I did.

Don't go by what I say, make the cookies. Everyone has different tastes. Dr. Atkins thinks it makes good cookies. There is a recipe for a Sour Cream Banana Bread on this website that is just awesome. I can't tell you how many crappy breads and muffins I have made in the last l4 months in the hopes of finding one that is edible. Well, the Banana Bread and the Almond Pancakes are edible and there is not an ounce of soy flour in the recipe, just almond flour. Which is basically just finely ground almonds. Try the Bread!!!

On the subject of soy flour ... our Great and Magnificent webmaster, Wa'il, posted a terrific idea for toasting soy grits for a couple minutes in a hot dry pan, to kill the bean-y taste. Well, I tried the same technique with soy FLOUR, and it worked great. Keep stirring though, and take it from the heat as soon as it starts to smell nice and toasty and nutty. It burns fast .. :eek:

I don't use it a lot, a Tbsp in my revolution rolls, or an ersatz breakfast pancake -- I toasted up about 1/2 cup, and store it airtight in the fridge.

The toasting really does improve the taste. Thanks Wa'il :)

I do so much look forward to trying it... I am sure it will taste a lot differnt than what I am used to...

NO worries though.. As Wendy said, I don't really want bread anymore either. I just love to bake, and am glad to have something I can try to bake and Taste!!!

My little cooking motto is

Never Trust a Skinny Cook,

but I am hoping I will be a skinny cook someday and a damn good one at that... !!! LOL

Hi Doreen

I've just begun to get a hankering for the odd biscuit and a bit more variety. So I've been searching for the old soya flour (no Atkins here either) but it sounds dee - sgusting. I was away to try the nut flour in the bread maker but I'm not a big bread eater anyway. Do you think that hazelnut flour would work in the coconut cookies or whether it wouldnt come out right, be too much etc??

And by the way does anyone have anymore cookie recipes? At a carb a time I could have about 20 a day and still eat some vege and stuff. Sweet!

Actually I think I know why I'm losing so much - because I dont think that I'm eating anything near the 2800 cals that befits my grand size. I just couldnt eat that much (thankfully) but it wouldnt stop my mum, she told me she has a five egg ham omelet for breakfast most days!!!! I'm not a big eater, merely a Hagen Daz and swiss chocolate addict which is what got me in all this trouble. It wasnt worth it but it was great at the time, at least I'll always have the memories.....

Anyway as Cookie Monster would say - Cookies, Cookies!!! Any decent non Atkins recipes, gratefully received.

(makes 32)
3/4 cup Splenda, granular
1 cup butter
1 teaspoon vanilla
1 cup almond meal
2 cups whey protein
1 egg white, small
3 tablespoons flax seed meal
1/8 teaspoon stevia

Cream butter, vanilla, stevia and Splenda. Stir in almond meal, and flax seed meal, then protein powder. Mix in egg white. Grease cookie sheet and drop dough by spoonfuls to form one-inch balls. No need to flatten, but one quick press with the thumb won't hurt. Bake at 350 for 10 minutes. Store in an airtight container.
Protein 6.0 g
Carbohydrates 2.3 g.
Fibre 0.2 g
ECC 2.1
Note: count will change depending on your protein powder

These are pretty good and they keep well. I made them first without the egg. My husband thought they were melt-in-your-mouth wonderful but they crumbled like dust. The egg white holds them together better. The flax meal and stevia are my own attempts at reducing the carb count and increasing the fibre. Use ¼ cup more Splenda instead of stevia if you want. Skip the flax meal. No harm done.

I bought the Bake Mix 2 weeks ago and attempted to make the pancakes. UGH! :eek: One bite and the whole plate of pancakes went into the trash. Note of disclosure here, my Bisquick pancakes are quite often dumped right into the trash because I screwed them up in some way, so this might be me, not the bake mix. But, my goodness, they were just dreadful.

I am hoping one day to try the cheese crackers or something like that. I'd best stick to the easy recipes! ;)

Whey protein is powder, it can be found at nutrition/bodybuilding stores. It has a milky smell and taste, much better than soy.

Sorry about that.

By whey protein, I mean the powder. I am no expert on the best kind because I have only started buying it very recently. (Maybe someone else can jump in here.) It is intended to be used for protein shakes. Around here you can get it in the pharmacy, in the health food stores, and in the vitamin shops. Look for it anyplace that has to do with sports nutrition. Be sure to check the carb count per serving and also the amount of powder needed per serving. There's quite a bit of variation.

It is very expensive.

Have you looked in the recipe section of this board? There are several cookie recipes there are well. I saw one for almond cookies using only almond meal. Sounds good too.

This message is for Patti, you probably did nothing wrong making those pancakes with Atkin's Bake Mix. I bought the stuff l4 months ago and it still sits in my cupboard. Thinking of using it for a door stop. It's okay mixed with parmesan cheese and spices and used for a coating but you can't really make bread or anything good out of it or at least I have never been able to. I found almond flour and it is wonderful.

Don't through away your Aitkin's bake mix! It is good for something, although I have never had food turn around and bite me like this stuff does. Must be really high in baking soda/powder or something. Try the crepes. They are pretty good. Here's the recipe I got off of another board. These crepes are used to make fajitas.

Crepes:

3 eggs
1/4 cup heavy cream
1/4 cup water
1/4 cup Atkins Bake Mix
The entire batch of crepes should have less than 10 carbs. Each crepe should have less than 1 carb.

Mix all ingrediants thoroughly, wisk until you have a runny batter. Add 1 tablespoon clarified butter to a non-stick skillet and heat over medium high heat. Add enough batter to the skillet to barely cover the bottom when you tilt the pan in all direction to cover (about 2-3 tablespoons). Cook until edges are brown then flip and cook for an additional 30 seconds. Set aside and make all crepes until batter is gone. Let crepes cool a bit.

I was surprised at how tastey they were. You could use them to make the fajitas, dessert with whipped cream and strawberries. I think I am gonna try to use them in a type of quesadilla.

I have tried most of them and they taste like."We say that here".
I think you get the picture anyway.

Can you Bread bakers please send some " Homemade Low Carb
bread mix formula's " that taste great !!!!!!!!!!!!!!!!!!!!!!
