Has anyone tried to make low-carb pizzelles (thin Italian cookie) using a pizzelle maker/iron? Any recipe ideas? Could you use any of the existing bake mixes, plus ? (mystery ingredient), to make a decent tasting, low-carb, cookie. I would appreciate any ideas or suggestions!

I (used to) love the high carb pizzelles that a friend made, but I knew there had to be a LC pizzelle recipe out somewhere there! Can't wait to make cannoli out of them too!

Now I have to go shopping for a pizzelle maker. Any suggestions as to brand and whether to use seasoned metal or non-stick cooking surfaces?

I have located a website called "fantes.com" which offers advice, recipes and flavorings, as well as name-brand pizzelle makers, at very low prices.
