I was given 15 lbs. of frozen blueberries, no sugar on them. Question, besides muffins, or the pancakes that i grew up with as a child, what do I do with them? I have tried making smoothies, and on occasion I have had them with a little whipping cream poured over them.
Also, was given a dozen cans of red kidney beans. Chili is the only thing I can think of, that would use the other 12 cans of diced tomato we were given. Anyone have any ideas for Atkins friendly uses?
It was very thoughtful of the person to give them to me, but all together they are an odd combination.

You know, when I saw your first question about blueberries, I thought about creating some sort of chicken dish using blueberries in the sauce. Maybe a creamy blueberry sauce to top off the chicken? Or pork or even steak or fish?
Or adding blueberries to chicken salad? Like people do with grapes ...
No clue about the red kidney beans.

Mmm, you can freeze the blueberries to maintain them, and then eat as many daily as are appropriate for your low-carb lifestyle. Blueberries are one of the *best* berries: low in carbs, high in antioxidants!
You could eat a *small* amount of the beans, depending upon where you are in your low carb lifestyle.

Wow! I would definitely help you out if I were nearby! :) Such a terrible, terrible, wonderful problem.
But to immediately solve your problem. Take the berries and spread them out on a baking sheet. Put them in the freezer until they're frozen. Then bag them up and freeze until needed. I use frozen berries all the time. Not AS wonderful as fresh, but better than nothing.

I just finished making roasted chicken thighs. For a sauce I used the leftover juices, added a little cream and some blackberries. I didn't expect to like it, but it's pretty good. I got impatient and didn't let the sauce thicken as much as I'd have liked. But it is tasty.
I'd imagine blueberries would work just as well.

Of course, you can mix up some softened cream cheese, sweetener of choice and blueberries. :yum:
And then there is: whip some heavy cream with sweetener of choice and the frozen blueberries (quick and easy ice cream).

Thanks for the great ideas, and recipes. The berries are already frozen. I've been using them so far to make smoothies, and a frozen yogurt. I know that there are a ton of non lc thing to make out of berries, family wants muffins and pancakes. I'd just like to have other alternatives that I can eat. I do like them frozen with the cream poured on them and they make an incredible smoothie that even the rest of the family likes even though its sugar free (I just don't tell them).

Frozen berries in heavy cream sprinkled with a little Splenda! Fabulous homemade icecream - my favorite!
I had eated blueberries this way since I was a kid, but we always used milk instead. Heavy Cream is sooooo much better.

The holidays are just around the corner, and soon we will be swimming in cranberries. I make homemade cranberry sauce mixed with blueberries. One of my favorite fall dishes. Just boil cranberries in water and choice of sweetener, mash down and fold in blueberries, and chill.

I don't have any answers for the blueberries, but I have a suggestion for a can of beans and a can of tomatoes.
Sausage soup.
In a large pot, brown a pound of bulk sausage. We like a spicy sausage, but whatever your taste is.
Puree a carrot, half a bell pepper, an onion and 1-3 cloves of garlic. Add to the pot.
Add the drained and rinsed beans and a can of tomatoes. Add an additional 2-4 cups of chicken or vegetable stock, depending on how thick you like your soup. Add herbs to taste. We like about a tablespoon of Italian seasoning.
Simmer for about an hour.
I'm sorry the recipe isn't more precise. I just throw this one together. The kids like it because they can't see the vegetables.

The kidney beans are a hard one because of the carb count. Good luck! But blueberries are more versatile... mixed into low carb yogurt, frozen and thrown into a clear soda or white wine (makes great ice cubes with a lil "umphh"), cooked with a lil flax and heavy cream like hot cereal, or mixed with some heavy cream, splenda, and walnuts it is like cereal (hot or cold). Berries help me with the battle of the sweet tooth!
