I don't know where I read it--either here or another board about someone who made a french toast omelet.

It looked interesting and I'm always looking for something new to add to the standards that I eat all the time.

Well, I made one this morning and it was fantastic.

I made my omelet mixture like I always do with some additions:

3 eggs
2 TBS half & half
cinnamon
cardamon
vanilla extract
Princess extract (if you just happen to have some)

Used my regular omelet cooking technique and stuffed it with a slice of co-jack cheese and a handful of blueberries. Finished it off with some SF maple syrup. It was fantastic.

Next time I'm either goint to put some cooked bacon or ham inside too. I think I'd really like the sweet and savory together.

Whoa, makes me wish I could eat dairy! Yes, smokey flavors are brilliant with sweet ones, ham or bacon would be luscious.

What the heck is princess extract? Google isn't helping.

Does the dairy include eggs??? If not,

Leave out the half and half--use almond milk, water, or nothing.

Leave out the cheese--2 types of berries.

Princess Cake and Cookie Bakery Emulsion--kinda almondy, kinda sweet. Think of a really good old fashion bakery--the pastries--like bear claws and almond claws--that sweet, buttery type taste. You can get it at King Arthur Flours.

I was thinking of the cheese you added to it. :) Nope, dairy doesn't include eggs.

Ingredients:
Water
Proplyene Glycol
Natural and artificial flavors
Xanthan gum
Natural color

and yes, even with the propylene glycol I still use it. I've been using these emuslsions forever in baking (in the bad old days;) )

Carb count? I have no idea. I can say it has never caused me any problem in my weight loss efforts---i.e., stalls, cravings, etc.

Hmm! Have to try that. Made the omelet without the emulsion today...added the bacon...yummy!
