I read that some people use herbs on their cheese crisps during making them. What herbs do you use. I've seen garlic powder, but what else is good with them? Could really use some ideas. Thanks.

onion powder & chili powder--if you're using "real" yellow american cheese, it tastes like goldfish.
PS--"real" american cheese as in not the "cheese product" stuff that you find individually wrapper, this is found at the deli counter and you have it sliced from the block. I like Land of Lakes yellow american.

I have not tried these myself, but I imagine the following would be good:
1. Havarti with dill
2. Provolone with sage/rosemary
3. Cheddar with "taco spice mix" (don't use the store bought ones- they have added carbs
4. Cheddar with old bay
5. Mozzarella with "pizza seasonings" like oregano, crushed red pepper, garlic....

I don't eat cheese crisps anymore, but rosemary/Parmesan was excellent. Try to match the herbs from the same region as the cheese. Italian cheeses -> Italian herbs. French cheeses -> French herbs.

I've used both Swiss and Havarti ("real" cheese ;)) as a base, with one of these (all were very tasty):
smoked "sweet" paprika
dried thyme
freshly ground black pepper
dried basil
go gently with the additions, cheese can be quite highly seasoned (i.e., salty) to begin with...I sprinkled them over lightly before cooking, best flavour that way (after, tends to fall off).
