sometimes it's hard to find breakfast meats without added sugar. Here's a recipe for breakfast sausage that tastes pretty good!

1.5 pounds ground pork (or mixed pork and beef)
2 t. kosher salt
1 t. ground white pepper
1/2 t. dried sage
1/2 t. nutmeg
1/2 t. dried ground ginger
optional: 1/2-1 t. cayenne

Mix this, form it into patties or "links", and fry over medium low until done. Freeze the rest as raw patties stacked on doubled waxed paper then in a zippered freezer bag and you can pop one out for breakfast whenever you'd like either the evening before to defrost in fridge, or the morning of, and defrost in microwave. OR cook them all up and freeze them cooked.

sage, by the way, is super easy to grow and dry and makes for a lovely and deer-proof garden plant

Thanks for the recipe. I am so finicky about sausage because they are always too salty and tough on my tummy in the morning. This will be a great one to try.

Thank you so much for this Recipe! I have been searching for sausage in the stores but couldn't find any that didn't have corn syrup or bread crumbs. I LOVE breakfast sausage! I used to buy Farmer Johns & jimmy deans when I lived in California all the time but here in Canada I can't seem to find may breakfast sausages(I used to look all the time even before LCing).
I made up the mix right now, I ended up adding the cayenne. Haven't made breakfast yet this morning but I did put a little bit in the microwave to test the seasoning. It tastes Great!
