I have never seen corn mentioned except as a no no and that makes sense. The whole point is to get the sugar content high in it after all. But tonight when I grabbed a couple cans of baby corn out for my kids I peeked at the label, but just to look, had no thoughts of eating it. I saw 2.5 servings a can with a mere 3 carbs and even better 2 grams fiber. According to the label a whole can is 2.5 net carbs.
OK, now tickled with my new discovery can anyone give me any recipes they have used this for? I did it in butter tonight but I will be testing it now. May not be corn on the cob but it is a nice change.

The baby immature corn is fine for most people since it is low sugar and low starch as you noticed compared to mature corn kernels.
I mostly just throw it in at the end of cooking stir frys and curries myself.

i've only ever seen baby corn in stir fry too. LOL at the mental image of eating baby corn on the cob.

I eat it with salt and butter when I want that corn taste, too. Its good.

We often put it in salads here. Just toss a few ears on your salad. Quite nice. Thanks for pointing out it is low carb, I've been kind of avoiding it.

...to add corn flavour to nut-based "corn bread"...recipes in the Recipe section...many a year.

hmm i never thought of that.. i love baby corn. i pretty much as well have only seen it in asian inspired food. maybe ill get some next time im out.
my mom used to make a chicken and sometimes beef stirfry that was great.. im sure minus the sauce its pretty low carb.. it was mostly cabbage baby corn bamboo shoots broccoli and cashews and butter and some other veggies i cant remember... so so good..
