Help. :help: I bought a huge bag of pine nuts. (have no idea why) Anyway, does anyone have a good use for these? TIA ebp

I like to toast them slightly in a frying pan, and then add them to butter sauteed veggies such as asparagus. Yum!

I also think they are good added to salads. It helps replace the crunch of the crouton. (although Almond Accents are my favorite for that)

I'm looking forward to more contributions to this thread. Great topic!

We swung by our new favorite little place and the delight on the menu last night was pesto and goat cheese cheesecake on the antipasto platter. I'm going to try and recreate it and if I get it right, I'll post the recipe. The true delight of it was the pine nut crust... most excellent!
I sure hope she comes up with something she feels is worth posting!

I loved toasting them in my toaster oven and putting them on salads. But they're used in pesto too. Anywhere you want a little crunch really.

I make spaghetti squash and then toss the squash with pine nuts and alfredo.

Green beans!

Fry up some bacon until crispy. Dry on paper towels and crumble.
Toast pine nuts in an oven or frying pan until starting to brown and fragrant.
While doing that boil green beens until cooked. Remove and shock with cold water to stop the cooking process.
Melt butter in pan and move all items back to the pan to reheat. Add some spices if you'd like!

Goes great with some nice medium-rare BBQ steaks w/fried mushrooms.

Wow - thanks for all the great new ideas. ITA that "crunch" is something to go after!!! I will be trying the spaghetti squash and green bean recipes, and checking back for the goat cheese recipe in hopes it will come along!
