Hello all! I am looking for a low carb creamed spinach recipe. Does anyone remember seeing a recipe for this in this forum? I searched but can not find one.

Have you checked some of the cauliflower recipes for mock mashed potatoes, or mashed cauliflower? Some of those creamy sauces would probably work really well with spinach - basically a mixture of heavy cream, cream cheese and sometimes a little parmesan, plus whatever herbs or flavourings you like with spinach.

I make my creamed spinach by adding heavy cream and cream cheese (just enough to coat it, it's not dripping in sauce) to a package of cooked and squeezed dry chopped spinach. Sometimes I add parm cheese and garlic and onion powder. It's not thick, like the stuff made with a flour/milk sauce, but it's fast, I love it and always eat the entire recipe.

3 pounds spinach
2 tablespoons unsalted butter
2 tablespoons extra-virgin olive oil
2 cloves garlic, lightly smashed
3/4 cup heavy cream
1 teaspoon freshly ground nutmeg
1/4 cup freshly grated Parmesan
Kosher salt and freshly ground black pepper


Wash the spinach in several changes of water to get rid of any grit. Drain the spinach but keep some of the water clinging to the leaves. Heat the butter and oil in a large skillet over medium-high heat and add the spinach and garlic. Cook, turning frequently, until the spinach has wilted down evenly. Remove the garlic and put the spinach into a colander and let it drain well. Press out as much liquid as you can from the leaves and chop them coarsely.
Heat the skillet again over medium-high heat and add the cream and nutmeg; cook until it reduces a bit, about 5 minutes. Add the spinach and parmesan and season with salt and pepper. Cook until the spinach is hot, about 5 more minutes. Serve immediately.

Last week I crumbled some blue cheese into heavy cream, simmered it briefly, then added spinach (blanched), salt and pepper. It was excellent, but I was was using a very high quality blue cheese.

What I usually do is to sautee shallots or garlic with mushrooms till they're softened, add cream and simmer, then add spinach (blanched), salt and pepper. Also delicious, especially if you use some porcini with the mushrooms.

This is my favorite creamed spinach recipe. It's very thick and rich. Sometimes I add some real bacon bits too for a change of taste.

20 ounces spinach, frozen
8 fluid ounces cream
1/2 pound white american cheese
1/2 cup shredded parmesan cheese
1 teaspoon minced garlic

Melt both cheeses in heavy cream.

Add garlic, salt and pepper (very little salt).

Cook spinach--boil for 3 minutes.
Drain spinach well.

Add to mixture and cook on low for 5 to 10 minutes.

This one tastes just like the creamed spinach from Boston Market! I love it and actually, I have not made it in some time....

5 Tbsp butter
1/4 cup flour (I use thick n thin and adjust the amount accordingly - 1 1/2 tsp)
1/2 tsp salt
1/2 tsp pepper
1 cup 1/2 & 1/2
4 oz cream cheese
1 small onion
20 oz frozen spinach - thawed
1/4 cup water
1/4 cup parmesan

Melt 3 tbsp butter, add thick & thin, salt, & pepper; whisk in 1/2 & 1/2. Add in cream cheese and cook until thick. Saute onions in 2 tbsp butter. Add spinach and water. Combine - add parmesan.

Cook at 375 for 30 minutes
