I have used a chicken breast recipe suggestion from your website several times and enjoy it. Unfortunately I have lost the page. It was contributed by a reader and described as analternative to Kentucky Fried Chicken.
Do you keep these recipes in an archive?
Thanks for the help

That sounds like the "Finger Licking" recipe I made last night. Did it involve mayo, lemon juice and vinegar?

In any case all recipes can be found here in the forums. Just go to the support forums link and scroll down to Kitchen:low carb recipes. Chicken dishes are often found in the main dish category and every forum comes with a handy search feature.

Recipe Name: Finger Lickin' Chicken
Ingredients:

4 or 5 chicken breasts
6 Tablespoons Mayonnaise
2 Tablespoons Lemon Juice
1 Tablespoon Vinegar
2 Teaspoons Salt
1 Teaspoon Pepper

How to Prepare:

Mix mayonnaise, lemon juice, vinegar, salt and pepper in a bowl. Pour over chicken. Cook on 350 for about an hour or until browning on top.

I know this sounds strange but it tastes like KFC without the crust!!

**I made this last night too, for the first time -- I was not fond of it. Too salty, and didnt taste like KFC to me. Oh well, thats what makes the world go 'round!!

I wouldn't use that much salt, for sure. There's enough salt in the mayo, usually...but I'd just sprinkle S & P on before adding the rest.

Meanwhile, just in case, there's an old archive of Readers' Recipes which predate the Forums, still available here on the website (and won't be found using the Forums Search features).

Up above, on the top green menu bar, there's a Recipes link, which takes you to Karen Barnaby's excellent
gourmet recipes (http://www.lowcarb.ca/low-carb-recipes.html)
page here on the main website.

On THAT page, at the top of Karen's pic, in red, is another link,
Go To Readers' Low Carb Recipes (http://www.lowcarb.ca/recipes.html)
and there you will find the original tried and true reader-supplied recipes from the early days, predating the LC Kitchen forum and still available on the main website.

Enjoy!
