Hi everybody.......I have been looking through the breakfast recipes and noticed Egg MockMuffin by Norma June Penny they sound delicious!!!!!!! has anyone tried them and if so how many does the recipe make and also the carb and fibre count?? I tried looking up sausage meat on Dietclub but they only had raw sausages I suspect that that would be the same as American sausage meat?? if so it says o.5g carbs and 0.6g fibre per 25g raw sausage. Am I making any sense here? Would be greatful for any input :)

I bought the sausage mince today and intend to make them this weekend, because I agree, they sound very nice.
The sausage mince didn't have any carb count on it, so it will be a little difficult to work out exactly, however will give it a go. Will let you know how I get on.

Nothing to do with egg mock muffin really, but someone reminded me recently about crustless quiche - easy to make, freeze ok, great for hot or cold snacks, breakfast, lunch ...
as low carb as you want to make it, heaps of variety possible.
let me know, anyone, if you need a basic recipe.

I have just made the Egg Mock Muffins and they are delicious - like mini quiches.
I was unsure was 1pg of sausage mince was so I took it to be a lb and used 500g. The American tablespoon is smaller than ours, so I used 5 tablespoons cream (90ml).
I got 12 large muffins and 6 small ones out of the mix.
I don't think there would be any fibre count in it at all.
The carb count worked out to be 2.6g per large muffin and 1.3g per small muffin.
I think they would make a good quick breakfast or a nice lunch with salad.

Hi, Marg. Tried out the crustless quiche recipe today without flour etc - works fine (the eggs set it), and can add all sorts of low carb stuff to basic recipe like silver beet/spinach/any other veges, and or salmon/tuna etc. So it's very low carb, can be eaten hot or cold, breakfast/lunch/snack and freezes ok.
I'm new to this: do I post the recipe here or somewhere else?

I don't think there is anything stoping you from posting the recipe in here but there is a recipe section for other people to share recipes. If you go to the end of the post and find Forum Jump and scroll down to the section where it says New Recipes or something like that and go from there. Sorry I am not much help even though I have been here longer then you I am not good at finding things around here. I am looking forward to trying your quiche out. Marg.

ok, Marg, here it is! It is so easy - and I'm a very basic cook.
Here's a crustless quiche adapted to be a very low carb recipe. It worked perfectly without the quarter cup of self-raising flour in the original - it was very tasty, and should freeze well too. Was quite rich, so will try an extra egg and more veges in it next time, also for added height.
Here it is:
crustless quiche - basic recipe
small onion, chopped (could leave this out)
half cup of cream/water mix (to replace the half cup milk, and all
cream prob. too rich)
3 eggs
1 cup grated tasty cheese
half teasp salt (optional, depending on what else you add in)
method: saute onions in butter (do not brown). Mix cream/water, eggs, salt. Add in onions, cheese and anything else you want - see below.
Pour into buttered quiche baking dish. Put thin slices of tomato on
top. Bake at 400 degrees F or 210 degrees C for 20-30 minutes or
until filling is set in centre. Serve warm or cold.
additions: any cooked low carb veges - silverbeet/spinach, sliced
beasn, broccoli ... best steamed or microwaved so no extra liquid.
Pumpkin could be good too. AND: try adding tinned salmon, tuna, etc. Low carb and delicious! If adding the oil from tin, use it instead of some of the cream/water mix. This is really quick and easy, great breakfast on the run, lunch etc.

I can't wait to try your recipe...it sounds delicious and so easy to do......I'm only new at this and I have been looking for easy recipes as I hate cooking.....am still looking for an easy bread recipe...but no luck
Anyway will let you know how I went with your recipe....

Hi Susanrnz, Well made your crustless quiche and it was yummy, I had some for a quick breakfast and the next day for lunch with salad. So easy to make and so tasty will experiment with other ingredience as well..........thanks for the recipe Marg.
