I just got back from my grocery store and noticed that the squashes are starting to make an appearance. Some of them I don't even recognize!

Other than spagetti squash, does anyone know off hand which others are low enough carb to bother with?

zuchinni and yellow [summer] squash are both low in carbs

Ys, and I love them, but they're on their way out of season. I'm curious about the hard squashes.

winter squashes which are showing up now are WAY HIGH IN CARBS. That's why you won't see many (any?) LC recipes using them...darn, because i love them all too!

I'm paleo so I eat winter squashes. I like the Kambuchi and Butternut squashes. Acorn squashes don't do it for me. I don't think I've had hubbard squash.

I agree with Nancy (and I'm not paleo...but...)
Stuffed winter squash (use ground almonds, mushrooms, ricotta, chopped spinach, tofu, scrambled eggs, canned salmon, or your favorite ground meat) is something I look forward to all year. A hard-shell squash is kin to a pumpkin...and pumpkins fit nicely onto low carb plans.

Nancy, hubbard squash is wonderful...but I also like delicata, turban, and yes--I confess--acorn. ;)

BTW, hard squash, pureed, makes a lovely harvest pie, too. ;)
