Hi all :wave: ,
I just went to an organic/natural foods store around my town and I just found Unsweetened Coconut. I also bought some almond meal. I love to cook and experiment, I like making the recipes posted on here sometimes, Yummy! I expecially love flaxmeal in the mornings, that's why I needed the almond meal. But what to do with my new found unsweetened coconut? I love sweet treats but I like to try different things with it too. Any ideas on what to make with it? I sincerely thank you for your ideas. I can't wait to see what I can make! :yum:

COCONUT CUSTARD
Serving Size: 8
Preparation Time: 1:10
-------- ------------ --------------------------------
1/2 cup unsweetened coconut meat -- shredded
4 large eggs
1/2 cup canned coconut milk (check the carb count and ingredients list)
1/2 cup water
1 tsp vanilla
2 tbsp melted butter
1/2 cup Splenda
1/2 tsp cinnamon
nutmeg
Throw all (except nutmeg) in blender and blend for 2 minutes on medium. Pour into buttered loaf pan. Sprinkle with nutmeg. Bake in a water bath (half fill a cake pan with water and put loaf pan in it). Bake at 350°F-180°C for an hour. Cool and refrigerate
Maybe toasted coconut and slivered almonds on top?
Coconut Macaroons
Atkins bake mix for dusting
4 egg whites (room temperature)
1 1/2 c Splenda
1/2 tsp coconut extract
3 c unsweetened coconut
Heat oven to 350 , Grease baking sheet and dust with bake mix.
Whip eggs until medium peaks form, and gradually add sugar substitute and coconut extract. Fold in coconut. Drop by Tbsp on baking sheets and bake for 12-15 min. Cool on sheets for 1 min. Cool on racks.

MY very favorite recipe:
Chocolate/Coconut Haystacks!!
1 stick of butter
2 squares of Baker's unsweetened chocolate
Cover with napkin and microwave for a minute or so (til melted)
Stir well... add in:
1/3 to 1/2 cup of Splenda
Stir well... add in:
1 cup (I add a little more!) unsweetened coconut!!
Stir well... add in: a splash of Vanilla extract (optional, but good!!)
Place by teaspoonfuls on a foil lined cookie sheet... place in freezer to harden... then bag into ziplock bag to keep in freezer (they melt quickly)...
ALMOST like a Mounds Bar!!!.... I love these.... I get about 16 pieces per batch... so maybe 1.8 carbs per piece??.... Note: add a splash of heavy cream if mixture seems too thick....
(I buy unsweetened coconut 3 bags at a time... rebag into a ziplock freezer bag, so it stays fresh!!)

I and my husband both love these cookies:
cream together:
3/4 cup butter
2 eggs
1/2 cup splenda
add:
1 cup unsweetened coconut flakes
1 tsp baking soda
1/2 tsp salt
1/2 tsp vanilla
2 cups ground almonds
Put on a cookie sheet (no need to grease it) and bake at 350F for 14 minutes. When you are dropping the dough onto the sheet, be sure to shape it how you want the cookie to be, because it will not change shape as it bakes.
I also like to sprinkle coconut flakes in yogurt, or use them in a LC granola.

They all sound delicious! I'll be trying them all out.
I also went into Linda's low carb recipe site and found a recipe for coconut crisps, :yum:
1 ounce almond flour
2 ounces of coconut
1/2 tsp salt
2 tbsp slenda
1/8 tsp vanilla
1 egg white
Mix well and shape into cookies. The best way is to roll some and flatten them out with a can, according to linda's instructions I believe.
bake for 325 degrees at 15-20min.

This isn't a sweet treat, but one of my favorites.
I would take and make a stirfry from shrimp and broccoli. I would add in unsweetened, shredded coconut, and when done I sprinkled some slivered almonds.
It was an extreamly simple recipe, but when I ate it I would get a warm flush of energy through my body. Kind of like I was on fire from the inside.

mmmm...One of the desserts I miss the most from Pre-LC is The Outback's Sydney's Sinful Sundae.
Pretty simple -
Take that yummy coconut and scatter some on a baking sheet and broil until a light golden brown. (you have to watch this CLOSE! It burns easily!)
Sprinkle the toasted coconut on LC Vanilla Ice Cream and top with LC Hot Fudge (LC chocolate sauce will work in a pinch). Garnish with Strawberries and homemade whipped cream if you like.
Basic, but Oh, SO good!
