I have a low carb magazine and it has an article on coconut oil.
I purchased some the day after reading the article and my weight had dropped surprisingly. I am frying my eggs in it as I type this post.

I use coconut oil, really like the taste and all the health benefits attributed to it -- however, never has it seemed to contribute to any weight loss for me....

I recently bought some, mine is a solid at room temp. It is the Extra Virgin kind. What else would be good to cook with it? Eggs don't sound great with coconut oil but I'm thinking shrimp. Any other recipes out there that incorporate coconut oil?

I make curries using it, use it when "grilling" fish, add a dollop to my morning hot cereals (good!) - I absolutely detest it in coffee and/or tea, though. I think some people make chocolate coconut candies with it, too.....

i just bought some today and will try it to make my chicken curry tonite...can't wait. i have also heard people use it for all manner of meats. i think the flavor is really subtle.

One of my favorite things cook, is I cut a few chicken breasts into strips, dip them in egg, roll them in unsweetened shredded coconut and fry them in the coconut oil. Then I serve them on top of a bed of greens and have some salad dressings available. My husband loves them, I love them. My kids, well they are so-so. I always cook extra to have in the fridge to snack on.

I use it for cooking almost everything: eggs, fish, meat, I also use it to grease pans for low-carb muffins, and whatever remains on my hands I just rub it in...
I put about a teaspoonful into my tea. I didn't like it in coffee though. I can also eat it from the jar, some people just can't stomach it. My husband doesn't like it :-( he can tell if something is cooked with it. I have the Virgin CO, maybe next time I'll get a refined one. I also use it for moisturizing.

It really does not add any flavor to fried eggs. The only reason I don't advise frying in it is so much is wasted and it is expensive.

Yummy Coconut Spread

I use this for Pork Rind waffles, crepes, if you do whole wheat breads..

1 T coconut oil room temp (semi solid)
1t cinnamon
1 drop maple extract
a few drops of sweetzfree or sweet to taste

Yum! I usually make about 3 oz at a time and store in fridge (to keep things from seperating). I can eat this as is or like I said add to a low carb breakfast goodie.

I love coconut oil and Tropical Traditions is the creme de la creme. I am taking theraputic doses right now 2 tbps in addition to using it to cook and bake with.
