I have this great grilled chicken wing recipe. I think that with a few changes it could be a great LC recipe. I need your help! I have looked at it and can not figure out how to bring the carb count down. Any ideas you have would be greatly appreciated!

Here is the recipe:

16 chicken wings
1 cup of ketchup
1/4 cup of dijon mustard
1/4 cup of soy sauce
1/4 cup of hot sauce
1 tablespoon light brown sugar

Use half to marinade wings overnight. Use reserve marinade to baste wings while grilling.

maybe SF pancake syrup for the brown sugar??
heinz makes a 1 carb ketchup but a cup is a lot...do you need to use it all? maybe water it down?

splenda instead of sugar, and low carb ketchup instead of ordinary itl stil be higher in carb than usual chicken wings, so just have less.

Spenda now makes brown sugar and you could try CarbOptions Ketchup.

Beware the Splenda brown sugar - it is Splenda and REAL brown sugar mixed. I checked it out a couple of weeks ago when my mom told me about it.

Or just deep fry your wings. Then I mix Franks hot sauce a little bit of butter and a little vinegar. If you like them mild add more butter the more butter the milder and if you like them hot like I do I only add a little. It is fast and they taste great. Your recipe sounds good to but I stall when I eat splenda so I can not try it. Good luck

Ok I think that I have this figured out. I will use Splenda instead of brown sugar. Now the other flavors are where this gets tricky. I have figured out that 1 cup = 16 tablespoons. The serving size for the low carb ketchup is one carb per 1 tablespoon. So I was thinking that I would use ¼ cup of the low carb ketchup and then mix in some water. That way I still get the ketchup but I lower the carb count. The other problem is the soy sauce. That has 2 carbs per tablespoon. I was thinking I would use two tablespoons and then mix in some water there again. I believe if I do that the carb count for this sauce/marinade is 8. Am I right in my thinking? Please let me know what you think.

Read the ingredient list on your soy sauce. Some contain wheat, while others don't. I use the wheat free stuff and think it's lower in carbs if memory serves me.

The only soy sauce I've ever found that is wheat free is specifically targetted at people who can't eat wheat and it is usually in health food stores. I just bought some, I didn't even think to look at the carb count.

Bragg makes a wheat free seasoning from soybeans and purified water. Nothing else on the ingredient list - not even sodium!

In Canada, it appears to be called Bragg All-Purpose Seasoning; in the US, I believe it's called Bragg Liquid Aminos Seasoning. Their website (www.bragg.com) claims 100mg carb per 1/2 tsp. - (if my math is correct, that would be 1 gram of carb to 5 tsps). I use it all the time and it tastes just as good as Torani soy sauce to me.

PS -- I buy it at my regular grocery store in the soy sauce and Asian foods aisle.

Thanks for the soy sauce tip! I went to the store and looked in the asian food aisle. There was a soy sauce that had no carbs!! I think I finally have this wing recipe down to 4 or 5 carbs!! I will let you know how it turns out!

If you miss the taste of the brown sugar, try adding a couple of drops (yes - drops) of blackstrap molasses. Not regular molasses, it has to be blackstrap. 1 tsp has 4.5 gms carbs and I use 1/4 to 1/2 tsp for the flavor of 1 cup of brown sugar.
