Hi Karen, I wanted to ask a question about red wine. I am on South Beach, and can have one glass of red wine with my dinner....but what happens if I use it to cook with. How does the alcohol get burnt off if I have it in a covered dish in the oven..? I know it seems like a stupid question, but with a lid on, would the alcohol burn off in the same way?

I used some red wine to cook with today - put it in a casserole, cooked it for 2.5 hours...but it was covered...does this make any difference? the only time I have ever seen anyone referring to burning away the alcohol, it's usually as they're setting fire to it LOL
