I have read different recipes on using canned coconut milk but now that I have bought it I can't find anything.
Does anyone have any good uses for coconut milk??

I use it in my morning protein shakes, yummy!
I usually open the cans up and put them in a jar, mixing them with a bit of splenda to sweeten it. Then I use a 1/2 cup in my protein shakes in the morning.
There's two kinds I get - one is more milky, the other gets solid when I put it in the fridge. The solid one I eat just like that, it's tasty.

I basically use coconut milk in place of cow's milk in recipes, especially desserts. I don't digest cow's milk well, so coconut milk works out very well. I use light coconut milk. Regular coconut milk can be watered down to reduce calories and make it more fluid. I love using it in puddings and pie fillings, especially. I also use it in waffles and pancakes as part of the liquid ingredients. The flavor of coconut milk it not intense at all which makes it a great alternative to cow's milk and can be used in most recipes calling for milk.

I mostly use coconut milk for all sorts of kinds of curries...I really like the flavor it adds. :yum:
