I am thinking about buying a deep fryer but am a little confused on how they work. Do you have to pour in new oil every time you fry (because that could get expensive!)? Also, how much of the oil you fry in actually absorbs into your food (because I also don't like the idea of adding 1000 calories to a meal!) Thanks!

Well, you can reuse the oil by filtering it through coffee filters.

I bought one, sort of wish I hadn't though, I rarely use it.

Hmmm... it doesn't use all the oil or even most of it. I suppose it depends on the food and how quickly it cooks.

Alton brown (on food network) did a test when he made french fries. He found that after cooking quite a lot of french fries only 2tbsp of oil had been absorbed by ALL of the french fries. Of course this requires proper cooking techniques, so what are you gonna fry?

I also agree though, a deep fryer is a waste of money. You can't do anything with it BUT fry. INSTEAD: invest in a good heavy-duty pot, that way you can use it for countless other things as well.
