Has anyone tried this? The Atkins sight said it was ok for induction..it looks so good...

I made it the other day and it was pretty good. The recipe at the site says it's 4 servings, but to me it's too heavy to really eat that much of it. I made sf jello and mixed a couple table spoons of it with the mascarpone parfait. Hmm as I'm typing this I'm thinking layering the sf jello and mascarpone in a tall clear glass would be pretty and yummy. I'll have to try it that way.

Mascarpone is really heavy. You could add some ricotta to lighten it slightly OR you can use some whipped cream. A yummy parfait idea (past your initial 2 weeks of induction) is to mix ricotta with mascarpone (or just use ricotta entirely) and layer it in a pretty glass (a wine glass or martini glass works best) with some sliced strawberries and top it with grated white chocolate or toasted almond slivers. Add splenda to taste of course. A little vanilla extract works nicely with the mascarpone/ricotta.

I thought it looked more like pudding so I added some cocoa powder to it and it was good!

i tried it yesterday, and it was super yummy. it was pretty rich so i only had a 3 spoonfuls ;)

i also did a sf jello parfait... just layered the mascarpone with the sf jello. fab :thup:
