hi,

Is whipping cream the same thing as heavy cream, double cream? How about half and half?

And is ricotta cheese similar to mascapone?

There is no real difference between heavy cream and whipping cream except that whipping cream has a butterfat content of 30% and heavy cream has 36 - 40% butterfat. You shouldn't have a problem substituting one for the other in recipes. Whipping cream is a lighter version of double cream. Double cream has 48% butterfat amd it's easy to overwhip it. Heavy whipping cream has a higher fat content than half and half. Half and half is an equal mixture of milk and cream has a a 10%-12% fat content. They can not be substituted for one another.

Ricotta cheese can be used as a lowfat substitute for mascarpone.

marscarpone is more like a thick rich cream cheese then riccotta.

I havn't found double cream here in the US except for in small containers from gormet stores.

Basically like said above it's all about the milk fats. The ehavier the cream the better it whips.

Heavy whipping cream
whipping cream
light whipping cream
table cream
half and half
whole milk
2%
1%
skim

The higher fat ones require you to use less for the same taste and have fewer carbs.

It depends on what country you're in, though. On a recent trip to Pittsburgh, I was surprised to see that they didn't have what we call "table cream", which is 18% cream. My relatives didn't know what I was talking about.

We have "table cream" here in the South. Especially in stores who cater to the Hispanic community. They import the most wonderful assortment of fresh cheeses and variety of creams.

OH!!! and the Mexican vanilla is out of this world!!!!! We used to have to make a yearly trip to Mexico and I would buy quarts of the stuff and bring it home for myself, friends and family. But now they import it and I can buy it a Walmart.

If you have any stores in your area who cater to the Hispanic community you should pay them a visit.

I have never seen table cream here in WI either..
