I love to have milk in my oatmeal (rather than water) and to ocassionaly have hot cocoa. I'm single so I never make it through an entire container. Would it be safe to freeze milk into ice cubes and divide into individual packets for use later? How long would one be able to store milk this way?

I know quite a few people that freeze milk to make it last. I don't know how long it will keep while frozen - but I would guess at least several weeks if not months.
But why use fat free milk when you are low carbing? The lower the fat the higher the carbs. Use whole milk instead. Plus, it tastes better!

You could also buy 8 oz. containers of milk instead of quarts or gallons
But why use fat free milk when you are low carbing? South Beach has a different set of guidelines. Animal fats are strictly limited.

I'm a single person who really loves dairy. I can never get the portions right. Either the milk has spoiled by the time I need it or I just don't have any. When I buy smaller containers, I go through them too quickly. Just trying to work out a solution. I just don't want to waist $$$.
-Correct me if I'm wrong, but fat free or 1%milk is allowed on the South Beach Diet.

My personal opinion is the guy who wrote the book decided to try and attract those who believe in low carb and low fat to try and cash in and get the best of both worlds.

Its similar to atkins induction (but lower fat) and then it skips the OWL phase and goes into something similar to pre-maintenance. It reccomends things I cant believe its not butter spread (or one of those type spreads) in favor of butter and reccomends eating whole grains and most fruit while avoiding the white stuff. Basically Atkins' phase 3.
I personally feel like owl is possibly the most important phase on Atkins, because thats really where you learn most of how to eat and how your body responds to foods and keeps the grains out so you can add them in later. I also feel natural fats are important for you, and that includes saturated fat. I only avoid trans fats. But again, this is my opinion and some people are happy on SBD and feel its healthier for them. There are also people who may have certain sensitivity to fats or just dont like the taste that prefer SBD.
To each their own.
And yes, SBD does allow skim milk. You might be interested in trying the carb coundown milk and save on some of the sugar in skim milk.
