I have been given a recipe that contains the ingredient "Tender Quick", I was told it is a tenderiser. I have never seen it on the shelves here in Australia. Is there anything else I can substitute for it? The Recipe is for Hamburger Salami.
I would appreciate it greatly, if you could please help me out.

Most meat tenderizers are a combination of MSG and papain which is derived from papaya. Do you have 'Accent' in Australia? If you look in the spice section of a large grocery store, you will brobably find a small selection of different tenderizers around the Accent.

I'll take a look tomorrow, there is sure to be something that I can use. I haven't heard of "Accent" though.

I checked 3 local stores today, I couldn't find any tenderisers at all, even the butcher didn't know what I was talking about. I'll keep checking though, there is an imported food store that I still have to check
