Someone mentioned there was a recipe for a roasted daikon thing, I assume like casserole. I did a serach under daikon in the kitchen forums, but couldn't find it. Doesn anyone know where it's at? Also For teh Daikon hashbrowns and such, I assume you peel it first with a potatoe peeler, right?

Roasted Daikon
1 large daikon radish, cut into 1” pieces
1-2 tablespoons extra virgin olive oil
Dried rosemary or thyme (optional)
Set over to 400*. Preheat for 10 minutes or so.
Toss daikon chunks with olive oil and salt. Roast on a baking sheet for 15 minutes. Turn daikon chunks over to roast the other side. Toss with dried rosemary and/or thyme if desired. Roast for another 15 minutes.
Serves 2-4 depending on size of daikon.

Hi LadyBelle,
When I make anything with a daikon I always peel it first. When I make the hashbrowns I use a grater to shred them. HTH
