The cauliflower mashed potatoes would be great here, but I just don't seem in the mood.
Anyway I am haivng roast dusk, wine, and cake for dessert (LC of course). I have duck gibletts I could mke a gravey out of. Is there anything besides mock potatoes I could put gravey on though?

I would just use the gravy for the duck and make some zucchini hashbrowns. But that's just me:)

This is the recipe in Karens recipe forum for Cheesey Chicken Green Bean Casserole. I copied it from there. I make this as a side dish all the time without the chicken and it is DH and I's faaaaaavorite!
2 cans french cut greenbeans - well drained
1 can (4 oz) mushrooms (I used fresh)
1/2 of a med. yellow onion sliced very thin and separated into rings
2 stalks celery, sliced small
2 tbsp butter
1/2 cup heavy cream
1/4 cup mayonnaise
1 cup assorted cheese cut into small dice (cheddar, jack, pepperjack, etc.) (I used a variety of shredded cheeses I had on hand)
1/2 tsp lite salt and 1/4 tsp. regular salt (or 3/4 tsp any)
1/2 tsp pepper
1/2 tsp. garlic powder
boneless chicken breasts (I used 5 small ones) (leave out)
I use boneless chicken breasts to make a one dish casserole by first browning the chicken in a skillet until almost cooked. I put the chicken in the bottom of a casserole dish, and then added the butter to the skillet and sauteed the onions, celery and mushrooms until soft. Mix (everything together) the mayonnaise and cream, s&p, garlic powder, veggies and cheeses and pour over the chicken breasts. Cover and bake at 350 for 30-40 minutes. Uncover and brown if desired.
Serves 4.
You could make the casserole without the chicken and just have a vegetable casserole if you desired. If you don't include the meat, you probably could cook at little less time. You could also add a few sliced almonds.

Have you tried the fried cauliflower? I make it with bacon grease, grate the cauli and then add in onions. It is so good. When I take the leftovers to work, even people not on Atkins ask for the recipe.

Oooooh, I love the fried cauliflower but I like to have it when the price goes down in the summer when the fruit/veggie stands open around here. Thanks for reminding me of these.

How about shredded spaghetti squash? After I cook and shred it out, I redip it in boiling water and drain it, then put on plate and found ANY sauce/gravy is good on it :yum:

I have some spaghetti squash in the fridge. I ended up just having left over brussle sprouts. I was a good girl and had my green. I am overstuffed anyway. I stole alot of the skin off the kids chicken (the baby can't chew it right and tends to choke on it). I had a leg and 1/4 a breast. Between that, the sprouts, and LC cake for dessert, I think a side would of been over kill.
Thanks for the ideas though guys. It's helping me with future plans. I havn't tried fried cauliflower like that, I grate it for mock pork fried rice and fry it though. With bacon I fry cabbage. It makes a great breakfast :)
