I'm looking for some ideas of things to bring to work for lunch. I find myself buying lunch everyday and the expense is really adding up. What does everyone pack up??

every sunday i make some broccoli/cheese cream soup and some chicken breasts parmesan--both from the recipe forum....and put them into containers for the week. another favorite is leftover taco meat on a salad with some sour cream, cheese, and some tomatoes. i also like egg salad with a latortilla wrap for the bread...hope this helps

I always make enough at night for left overs, whether it be pork chops, chicken, steak, you name it and I always have salad fixins at home. I buy a family pack of hearts of romaine and cut and spin it myself and keep in a tupperware bowl, it lasts a long time and I eat a salad most every night or some kind of vegie, so when I am making my nightly meal, I make my salad up for the next day to eat with my meat at lunch. If I haven't done this, then I make some tuna salad and eat that for lunch. I have a fridge at work, so I make sure I have either cheddarwurst or sausage of some sort, so if I forget or don't have time to make my lunch I can pop a couple of them in the microwave.

First, I'll heartily recommend Gladware. :thup: Throughout the week, I'm always making "a little extra" of whatever I'm making, like Cindy said. Throw it in the Gladware. It's dishwasher safe and it lasts... forever, as far as I can tell so far. ;)

My favorite portable stuff:
- leftover meats, meatloaf, etc.
- HB eggs - you can take the shell off ahead of time, they'll keep for 24 hours
- sliced veggies: zucchini, bell peppers, mushrooms and celery are my favorites to dip. Slice them ahead of time. They keep really nicely in aforementioned Gladware.
- cold salads, not the lettuce/green kind. Think tomatoes, zucchini and bell pepper with some olive oil and feta cheese. Broccoli salad is a nice one, too. When you whip them up ahead of time, they have a chance to marinate. :yum:
- cheese and/or deli meats (slice 'em and Gladware 'em.)
- berries and/or nuts, if you're off induction

One thing I had and loved was a hamburger.

I took a buffalo burger, put cheese on, then wrapped it a napa cabbage leaf. I threw it in tupperware and put it in my backpack. By the time lunch rolled around the hamburger juice had soaked just enough into the nappa to make it stick to it. It held together well, had just a little crunch left and was wonderful.

If you use commercial mayo you can also pack tuna or chicken salad. Homade mayo doesn't have the same preservatives and must be refridgerated at all times.
