My local health food store had the Atkins Bake Mix on sale so I bought some. Any suggestions of what to do with it.

Get some string cheese... cut the cheese in halves... dip in a beaten egg... and roll pieces in mixture of 1 part bake mix - 2 parts grated parm - a sprinkle of herbs (I actually like using goya adobo) ... fry in olive oil for a few seconds on each side... and voila! Mozzarella Sticks!
(It's the only thing I use my bake mix for) :)

Herm, mine has sat decorating my pantry for 6 months. Everyone who's tried some says it's nasty, so I havn't bothered. I also just recently got some Carbsense 0 carb bake mix I should break out one of these days.
I found Whey powder makes such great foods though and is lower carb then most bake mixes.

I will confirm the nastiness quotient that LadyBelle referred to. As a replacement for flour in baked goods, it's positively yuck. Exception: The recipe for Molten Chocolate Cakes on the atkins website is quite yummy, especially when eaten with whipped cream.
I have heard that the bake mix makes a good breading for fried foods, though, so it might be worth looking into. I like filmlass' idea of mixing it with parmesan.

I bought some of the minicarb baking mix , it has zero carbs... I seasoned it with some crushed chili pepper flakes and rolled chicken tenders in it and fried them..OMG it was delicious!! I have not baked with it yet so can't help on that one, LOL!! (I am still experimenting!)

Kim, I used the Atkins bake mix about 2 weeks ago with my chicken potpie. It turned out wonderful. The recipe is , I think, in the meals forum. Im also going to experiment doing crab rangoon. I think that would turn out great.
