Have any of you heard of or tried wheat protein isolate in your baking? If you have I need some advice.

I am looking for advice on the use of MGP wheat protein isolate. This is the WPI that is used in commercial baking....

Yes, that is what I mean except that Lo-carber says that they do not get their WPI from mpg. They say that what they have is superior, and people who have tried both products say that the Lo-carber product works better. I have not tried the Lo-carber product. I have the MGP one but have not tried it yet....

Has anyone ordered this from locarber.com?
I selected 5# and the shipping came up to over $16.
Doesn't this seem a bit Excessive?

I ordered 5 # WPI from Locarber also, plus a bottle of the liquid spenda. My total on shipping was $18 something. I thought it was excessive also, but, I used to belong to a food co-op. The group that ran it would measure and bag up your order and it was a time consuming process. I wonder if part of the shipping is also handling charge?

That's a possibility -- have you used either yet? I'm curious to see what they are like. I have been looking at ingredients in the "store bought" cookies and lots of them are made with wheat protein isolate.
I'd be interested in your results.

I made choc chip cookies last night with WPI as 1/2 of the flour, and used some almond flour and oat flour for the remaining amount. I put in the cornstarch they recommend on the web site and they turned out Awesome!

Does anyone know where to buy WPI other than locarber.com?
I would love to try it, but have heard a few bad reports on locarber.com.
Thanks,
Sherry
