Hi, all,

I've tried a couple of store-bought low carb pastas and have found them to be pretty awful as far as texture goes.

My husband is of Italian descent, hasn't had any pasta (other than the 2 low carb brands we tried) in over a year.

Any thoughts? I have a pasta machine and would be willing to make it from scratch if I can do any better than that nasty store-bought stuff. Or if there are any decent low carb pastas out there, please let me know.

I tried LC pasta once before I began LCing just because I was curious. It tasted pretty horrid but the next day I mixed it up with some ground meat sauce, ricotta cheese and a blend of cheeses on top and made something like baked ziti (with thin pasta lol)

It actually came out pretty good, of course you didnt really focus on the texture or flavor of the pasta as much as the combination of everything.
