I wasn't sure where exactly to post this, but since it's so versatile, I figure here'll work. Maybe a moderator can put it where it should be if I'm wrong.
3/4 c. crushed seasoned pork rinds
1/2 c. ground pecans
1/2 c. parmesan cheese
This can be combined in large amounts ahead of time, then used in small amounts as needed.
To make it stick better, brush the meat/fish/whatever with oil before shaking/dredging in the mixture. Then bake on a rack or fry (fish fried in it takes on a really nice nutty taste.
Hubby, like many non-LCers I'm sure, is finicky about trying LC versions of stuff. And even though he doesn't like nuts, he loves this shake 'n bake. So, :thup: :thup: from us!
