I would mix with some heavy whipping cream, splenda, vanilla extract and beat until the right consistancy.

Ingredients:
1/2 cup cream cheese
1/2 teaspoon vanilla
1/4 cup artificial sweetener
-- add more to taste
How to Prepare:
Place all three ingredient in
small mixing bowll and mix
by hand until cream cheese
is soft and all ingredients
are mixed together well.
The amount of sweetener
and vanilla used is a matter
of personnel taste.

Here's another one I just found....
Ingredients:
8 oz package cream cheese
1 1/2 sticks butter
1.9 oz box splenda
1 tsp vanilla
How to Prepare:
Melt butter in small bowl and mix with cream cheese *cut up both, it's easier*. Try to get out all or most of the cream cheese chunks for creamier frosting. Mix in vanilla and gradually mix in splenda. Mix until fluffy and creamy! That's it!

There is a "Mock Danish" recipe somewhere in the recipe section, and I was just thinking how yummy it would be to make the danish, then slightly nuke a bit of icing to put over it. With a little bit of cinnamon, we're talking almost a real cinnamon bun type thing for breakfast! Folks, we may have a winner! :yum:

4 oz cream cheese, softened
3 tbls butter, softened
1 teas vanilla
1/2 cup heavy whipping cream
1/4 cup splenda
2 teas SF instant pudding mix
Whip cream cheese & butter ubtil fluffy. Add remaining ingrediants and whip until thick. Spread on cooled dessert. Store in refrigerator.
Whole recipe equals 14.5 grams carbs.

Great timing, you guys! We're having a party at work tomorrow and a diabetic friend asked me to make him the 3-minute devil's food cake, which I thought I'd top with cream cheese frosting.

I just made one that turned out well:
8 oz. cream cheese, softened
3 oz. butter, softened
1/3 cup Walden Farms calorie-free apple butter
Beat together till smooth.
This makes enough to spread generously over a 9 x 13 cake.
The carb count for the entire recipe is 8 gms.
I think the reason this turned out better than any of my previous attempts is that the artificial sweetener in the apple butter is fully dissolved. It also has a nice, subtle apple flavor and it isn't excessively sweet. :yum:

I made a really great one by accident. I mixed together cream cheese, smart start (softened butter would work), vanilla extract, almond extract, 2 packets saccharine, and enough granular splenda to get a good texture and sweetness.

I use cream cheese, splenda and lemon juice. It turns out like the ones on carrot cake, yum!

I'm going to try this one, as I don't use Splenda or the granular splenda.
Carbs Per Serving: no counts provided
Effort: Easy
Ingredients:
1 package (8 oz.) of Cream Cheese
1 tbsp of Vanilla Extract
4 packages of Stevia
How to Prepare:
Mix all ingredients in mixing bowl and mash together mixing well. May heat in microwave for 30 sec for more effective mixing. Spread on cake.
