What can you substitute for rice? I made some the other day with Zataran's mix as a base, adding lots of onions, tomatos, chiles, and about twice as much wild rice as was in the dirty rice mix package (along with 2lbs turkey burger), so I assume that a serving wouldn't contain TOO many carbs, but still, what can you use besides rice? Spelt or Kamut kernels perhaps?

I've heard of lots of folks using cauliflower as a rice substitue.
Blanch it, chop it up and put it in a recipie.
I think I saw a recipie or two on here using it-

Cauliflower does make a great replacement for rice. I shred it in the food processor, then sautee it in butter until it is done but not mushy. To use it in a dish like dirty rice, I'd cook everything else first, then add the cauliflower and cook 8 minutes or so.

To be honest, I got the idea from The Lowcarb Cookbook, by Fran McCullough. It contains lots of clever ideas and tips.
