I made some low carb biscuits tonight with Atkins bake mix. This is the first time that I had anything to eat that came close to bread. Well I was wondering if this bake mix stalls anyone and if not what else is good to make with it>

There is a GREAT cinnimon muffin recipe on the Atkins center website. I made those and then made some cream cheese icing to go on top. They were VERY nummy!!

do you need a bread machine for these mixes or just a baking pan and stick it in the oven?

Hi!
I made the belgium waffles and they are the best nice & Fluffy. Taste like the REAL thing. That recipe is in the Atkin's book. I also made the pancakes and they were not as good, very thin and soggie.

No you dont need a bread machine. Just bake them in the oven. The garlic cheese biscuits were very good.

Did you like what you made? I've heard a lot of people say that they hated the bake mix and the only thing that turned out tasting good was the zucchini bread. I've almost bought some a bunch of times, but never could bring myself to pay the $13+ for something we probably wouldn't like. Sure would be nice to have a non-pork rind breading though. My hubby won't do pork rinds. I made meatballs once with them and he said the more he ate, the more it tasted like pork rinds so now he won't even eat meatballs anymore...lol.

I was very leary also, but it turns out that the bake mix is the one thing I do like. I have made the belgium Waffles and I was surprised at how fluffy they were, my whole family loved them. And I have made the pancakes which I am not so fond of. I have also made assorted muffins and they were good and I made the blueberry confuni. So to me it is well worth the price! Check different places and you may find it cheaper somewhere. I just got it for $10.99 at a health food store by me. Also if you go to ebay on the computer you will find GREAT BUYS on alot of low carb products they you would pay an arm and a leg for in the store. I just bought a case of different kinds of low carb pasta for the price of what I would pay for two packages in the stores!

I just used the bake mix at dinner today for the breading on shrimp, it was really good. I can't wait to try biscuits and muffins with cream cheese, I have missed bread!
