Just starting to cut up vegetables for a Ratatouille Bake. Question..do you peel the skin off the eggplant first?
(sorry to sound dumb, but have never used before)

I'm not sure but I thought you had to soak eggplant in salted water to get rid of that bitter taste but I am unsure about the peel I guess if worried you could alwyas take it off...

I usually salt the slices, then rinse off before using, but if I forget, it doesn't taste any different. :D
